Apple & Carrot Cake Breakfast Wraps

Ingredients

    • 4 wholemeal or corn tortillas
    • 4 apples, grated
    • 1 medium sized carrot, grated
    • 1/4 cup goji berries
    • 1/2 cup chopped walnuts
    • 1 cup vanilla flavoured soya yoghurt
    • 1/4 teaspoon ground nutmeg
    • 1 tablespoon ground flax seeds

  1. Grab all of the ingredients (apart from the wraps!) and mix together in a large bowl. Leave this to once side to sit for 5minutes.
  2. Next get one of the wraps and place it on your work surface. Put 1/4 of the filling in the middle of the wrap.
  3. Fold the bottom of the wrap over the filling and then fold the 2 sides in creating a little pocket.
  4. Then roll the wrap up towards the top and place folded side down on a plate.
  5. Repeat this for the other 3 wraps.
  6. Cut the wrap parcels in half on a slight diagonal and you’re ready to eat. These are perfect for an on the go breakfast!
