Apple Cupcakes with Vanilla Frosting & Toasted Coconut
Ingredients
For the Cakes
1/2 cup margarine or coconut oil
1 cup coconut sugar
1 1/2 cup self raising flour (these cupcakes work well with gluten-free flour too!)
1 1/2 teaspoons cinnamon
1 1/2 cups apple sauce
2 apples quartered, cored, and thinly sliced
1 teaspoon vanilla extract
For the Frosting
1/2 cup vegan margarine
1 1/2 cups icing sugar
2 teaspoons vanilla extract
1/2 cup desiccated coconut (toasted)

Start by preheating your oven to 180 degrees celsius and line a 12 hole muffin tray with papers.
Now in a large bowl mix the margarine and coconut sugar together with a wooden spoon until nicely combined.
Then add your applesauce, vanilla extract and cinnamon to the mix and cream together using a hand mixer until all the ingredients are well combined. If you don’t have a hand mixer just keep going with your wooden spoon it just will take a little longer!
Next add your self raising flour 1/2 a cup at a time and mix well. Grab your lined muffin tray and add 1 tablespoon of the cake mix to each muffin paper, then add a layer sliced apples on each one.
Top each muffin with the remaining cake batter and place in the centre of the oven for about 20minutes. Ones the timers gone off take the tray out of the oven and test if they’re ready. To do this pop in a wooden skewer to the middle of one of the cakes. When it comes out clean they’re done! Put the tray to one side for the cakes to cool
Now for the frosting! Start by toasting the desiccated coconut. To do this add the coconut to a non stick oven tray and bake for 3-5 minutes. Once the coconut starts to brown it’s ready to go!
Grab your hand mixer again or wooden spoon and beat the margarine and vanilla extract together, adding the icing sugar 1/2 a cup at a time. Once your frosting has become well combined and fluffy its ready to use.
Ice each of the cooled cupcakes with the frosting and add a nice sprinkle of the toasted coconut. What a treat!
