Chia Seed Flatcakes with Cooked Apples & Caramel Cream

Ingredients

  • Apples
    • 4 diced apples (peeled or unpeeled, it's up to you!)
    • Juice of 1/2 lemon
    • 1 cup water
  • Flatcakes
    • 2 cups self-raising flour
    • 1 grated apple
    • 2 tablespoons chia seeds mixed with 1/2 cup of water
    • 2 cups almond milk
    • 1 cup water
    • coconut oil for frying
  • Caramel Cream
    • 250ml oat cream
    • 6 pitted dates
  • Not too hard

  1. For the caramel cream, put the dates and the oat cream into a blender and leave to one side to soak. Don’t blend it yet! Soaking the dates in the cream will help them soften to make a smoother caramel.
  2. Next add your diced apples, 1 cup of water and the lemon juice to a saucepan. Put the pan on a high heat and bring to a boil. Once bubbling turn the heat down and simmer for about 10 minutes until the apples are soft but still holding some of their shape.
  3. Now onto the flatcakes. In a large mixing bowl add your almond milk, water, grated apple and the chia seed mix. Grab a spoon and give it a really good mix until everything is thoroughly combined.
  4. Start adding your flour 1/2 a cup at a time and keep mixing to create a smooth batter.
  5. Frying time! Add 1/2 teaspoon of coconut oil in a large sized frying pan and turn the heat to medium.
  6. Once the oil has melted and is evenly coating the pan, add 1/4 cup of your flatcake batter. Let it cook on one side for 2 minutes until the top of the cake starts to harden, then flip it over and cook for another minute or two until golden brown.
  7. Remove the flatcake from the pan and repeat until you run out of batter.
  8. Now your flatcakes are ready to go, get your blender of cream and dates and blitz until it forms a nice smooth caramel.
  9. Put a few flatcakes on a plate, top with your stewed apple and pour over the sweet caramel and you’re done! This makes a nice pudding or a treat for breakfast, why not give it a go this weekend!
