From Soil to Loaf: The Story Behind Our Bread

When you bite into a slice of Infinity bread, you’re not just tasting proper bread—you’re savoring decades of tradition, a pinch of passion, and a sprinkle of co-operative spirit. For us, bread isn’t just food; it’s a craft, a community effort, and a connection to the land.

As we celebrate the Real Bread Campaign this February (15th–23rd), we want to take you on the journey of how our bread goes from soil to loaf.

Old’s Cool: Baking the Traditional Way

We’ve been kneading dough since 1971, sticking to recipes that keep things simple and honest. Take our wholemeal loaf, for example—it’s been made the same way for over 50 years with just four ingredients: organic flour, salt, yeast, and water. That’s it. No preservatives. No shortcuts. Just healthy, well-grown food.

Our sourdoughs? They tell a story all their own. The starter for our white sourdough has been alive for over 40 years (and still tastes amazing), while the myth surrounding our rye starter might be even older. Word has it that in the 1970s, some hippie bakers fetched water from the Chalice Well in Glastonbury to kick things off. True or not, the bread speaks for itself.

Real Bread, Real Ingredients

Bread should be as simple as it is delicious. That’s why we use organic grains milled the traditional way, keeping all the goodness intact. No par-baking or factory shortcuts here—just our skilled bakers working their magic out back every morning to give you the freshest bread possible.

“We treat our ingredients with respect,” says baker Ian, a proud member of our co-operative. “It’s not just about what’s in the bread; it’s about what’s not—no nasties, no additives, just good, honest baking.”

A Co-operative Effort

A worker co-operative since 1979, meaning every baker, shop assistant, warehouse worker and driver has a stake in the business. This shared passion is what keeps our ovens firing and our standards high. It’s also what inspires us to give back to the community.

Join the Real Bread Movement

The Real Bread Campaign (https://www.sustainweb.org/realbread/) is all about celebrating bread that’s made with integrity. No gimmicks, no shortcuts—just proper bread made with simple ingredients and real care. This year, we’re proud to stand with bakers across the UK who are championing this cause.

A Slice of Bakery Life

So next time you pick up a loaf, know that you’re not just supporting proper bread—you’re part of a story that’s been rising for over 50 years. And, if you haven’t tried it yet, well, what are you waiting for?

After all, there’s a better way to eat.
