Griddled peach and pistachio early summer salad


  • The Salad
    • 2 peaches, sliced into wedges
    • 1 tablespoon olive oil
    • 250g of leafy greens
    • A small thinly sliced red onion
    • 10 cherry tomatoes, sliced lengthwise
    • 125g of feta cheese or your favourite vegan alternative
    • 70g of Infinity Foods pistachio nuts
  • The Dressing
    • 30ml olive oil
    • 20ml apple cider vinegar
    • 1 teaspoon of local honey or agave
    • 1 pinch of celtic salt
    • 1 hand full of fresh chopped mint
    • a few pistachios

Grilled Peach Summer Salad

Imagine the taste of summer in every bite. This grilled peach salad is not just a dish but a memory of warm, sunny days and cherished moments shared with loved ones.




  1. Grill the Peaches: Toss the peach slices with olive oil. Preheat your griddle to medium-high. Grill the peaches cut side down for 2-3 minutes per side until softened and marked with griddle lines.
  2. Make the Dressing: Combine all dressing ingredients in a mortar and bring together into a paste with the pestle. Add more olive oil if you wish to have a loose dressing. Set the dressing aside.
  3. Assemble the Salad: In a large bowl, toss the leafy greens with half the dressing. Layer the salad with red onion, cherry tomatoes, and grilled peaches. Crumble the feta cheese on top and sprinkle with chopped pistachios.
  4. Serve: Drizzle the remaining dressing over the salad or serve it on the side.
